Spaghetti Squash Lasagna

Ingredients:
- 2 cups marinara sauce
- 3 cups cooked roasted spaghetti squash
- 1 cup part skim ricotta
- 8 tsp parmesan cheese
- 6 oz part skim shredded mozzarella (I used Sargento)
Directions:

Preheat oven to 375°.
In four individual 5 x 7-inch oven safe baking dishes, ladle 1/4 cup quick marinara sauce on the bottom of each dish. Top each with 3/4 cup of cooked spaghetti squash and spread evenly. Top each with 1/4 cup ricotta.
Sprinkle 1 teaspoon of grated parmesan cheese and .75 oz mozzarella on each. Addthe remaining sauce, parmesan and mozzarella cheese.Cover with foil and bake for 15 - 20 minutes, or until the cheese is melted and the edges begin to bubble; uncover and cook an additional 5 minutes.

Chocolate Chai Protein Cakes!
- 1/2 banana
- 1/4 cup brewed vanilla chai tea
- 2 tsp brown sugar or natural sweetener
- 2 tbsp of peanut butter
- 1 scoop of protein powder
- 1/2 cup of oats
- 1 cup of plain greek yogurt
- 1/4 cup of unsweetened almond milk
- 1 tsp of baking powder
First brew your tea so it’ll have time to cool. Make it as you normally would but with only 1/4 cup so that the flavor will be more concentrated.
Cut up the banana and put it in a blender or food processor along with the rest of your ingredients. Add the chai tea to the mixture and blend.
Spray nonstick cooking spray on a cupcake tin and pour your mixture inside. You can sprinkle nuts or fruit on the top if you like (:
Bake for about 45 minutes at 350 degrees Fahrenheit.
Let them cool for a few minutes before you eat.
